Grilled Boneless Pork Chop - No Marinade Needed

  1. First we'll need to get our grill hot. If you are using a gas grill set half of the grill on high heat. If you are using charcoal, we need to keep the all of the coals to one side. I like to start the grill early to make sure you get some nice grill marks when you place the meat on the grill.
  2. Next, rinse and pat dry your pork chops. Then, coat the pork with a thin layer of yellow mustard and liberally sprinkle both sides with your rub.
  3. Next, place the seasoned pork chops over direct heat. It will take approximately 2-3 minutes per side before we move them from direct heat to finish cooking. This is just an estimate. You need to watch the pork chops closely while they are on direct heat, but don't want to move or flip them unnecessarily. the goal is to flip once and then move to indirect heat.
  4. Once the meat is on indirect heat you will want to insert a meat thermometer into the thickest portion of the largest chop and close the lid. Monitor your internal temperature until it reaches 140 degrees.
  5. Remove from the heat and let rest for 5 minutes and serve. We want the pork to reach an internal temperature pf 145 degrees. We remove it at 140 because it will continue to cook once removed from the heat and we do not want it to over cook while resting.
